This wine is issued from 15 years old vines and over. Yields are lower than usual, 50 Hl / Ha.


The grapes, mechanically harvested go through a cold settling operation for 8 to 12 hours. This process is followed by fermentation in thermo-regulated tank (18° to 20°). It may be noted that gross lees juice is added before maturation on fine lees. The whole process is completed by regular stirring. The wine is matured in stainless steel tank for a minimum of 10 months before being bottled and marketed. 


This wine is to be drunk young so as to appreciate its freshness, as well as grown-up for its unctuousness.
