Vines of this cuvée are old (over 15 years old). The soil benefit froma a particular attention : grass cover cropping and shallow tillage. Yields are lower than usual, 50 Hl / Ha.
After a meticulous harvesting of the best grapes, the juice is cold settled for 8 to 12 hours. The wine is directly matured in barrel with regular stirring and topping-up. The wine is aged in barrel for 8 to 12 months before being bottled and marketed.
This wine is to be drunk at once or can be kept up to 5 years.
